Crockpot recipes have become to be again more and more used because the slow cooker dishes in which you can prepare them make an extremely tasty meal, they do all the work for you because the preparing time is extremely little and it makes extremely delicious and warm dishes which you can serve for days if you cook too much and you have leftovers because it is really easy to reheat and the food will as good as tasty as it was in the first day when you first ate it .
One healthy crockpot recipe is Greek chicken and vegetable ragout . For preparing it you need the following ingredients : ½ kg carrots, cut in pieces or you can choose 3 cups of baby carrots, ½ kg yellow fleshed potatoes cut in wide pieces, something similar to the wedges potatoes, 1 kg skinless, boneless chicken thighs, a cane of reduced sodium chicken broth, 1/3 dry white wine, 4 gloves minced, little salt, 1 can artichoke hearts, rinsed and quartered , 1 egg, 2 egg yolks, 1/3 cup lemon juice, 1/3 chopped fresh dill and pepper depending on your taste .

In the first place, take a slow cooker and place the carrots and potatoes on the bottom and up the sides and on top of the vegetables add the chicken . In a saucepan add the broth, wine, garlic and salt and put it on fire at medium heat . After few minutes of cooking add the mixture on top of the chicken and vegetables in the slow cooker . Then you can cover the cooker and let it cook until the chicken is cooked and vegetables are tender .
The cooking time on low heat can be for 4 hours or on high heat for maximum 3 hours . After this time, add the artichokes and cook them over another 5 minutes . In a bowl, mix the egg, the egg yolks and lemon juice . Meanwhile take the chicken and vegetables and to a bowl and cover it to maintain it warm . In the egg mixture add ½ cup of the cooking liquid and cook it covered for 15 to 20 minutes at medium h eat and at the end add the drill and pepper and before serving add the sauce over the chicken and vegetables .

Another healthy crockpot recipe which can be like a compote but served with a low fat cream and some nuts or walnuts can be the perfect dessert .
The recipe is called apple confit and for it you need the following : circa 1.5 kg baking apples , ¼ cup sugar, ½ teaspoon ground cinnamon or less if you do not like it very much and 1 teaspoon vanilla extract . First you have to peel the apples and slice them in thick pieces . Then you can place them in large slow cooker and add the sugar and cinnamon and toss them in order to coat them well . Cover it and cook them for circa 2 hours if you let the heat high and at the end the apples should be very tender . Add the vanilla and the final step is to transfer it in a bowl, cover it and refrigerate them and serve them only when it is chilled .
