Thanksgiving day is an important day for the Americans and which is celebrated with great parties full of many delicious dishes so it is important to make sure that you will not have digestive problems about the meal so it is advisable to cook some healthy dishes and to care not to eat too much .

There are many recipes for the traditional turkey but there is one which is special and very healthy and that is herb roasted turkey . For it you need the following ingredients : 5 kg turkey, ¼ cup fresh herbs , some 20 whole herbs for example thyme , rosemary, sage, oregano, marjoram, 2 spoons canola oil, some salt, 1 teaspoon freshly ground pepper, aromatics such as onion, apple, lemon and or orange and cut them into thin pieces and some water as much as it is needed . Take the turkey with the breast up and put in a large roasting pan

Make a mixture of the minced herbs with the oil, salt, pepper and rub this mixture all over the turkey especially under the skin and on the breast meat and place the aromatics along with the 10 herbs in the turkey cavity and tie the legs together .

In the pan pour some water and the remaining herbs . Put the pan in the oven and cook it till the turkey is roasted and the skin is brown for about 45 minutes . Than take the turkey out from the oven and cover the breast with a foil , then reduce the oven’s temperature and roast it for more than 2 hours . In the end transfer the turkey on a plate and cover with the foil . Make sure to let it rest for some minutes, circa 20, before serving it . Another good dish for this healthy thanksgiving day is wild mushroom stuffing .

For this you need the ingredients : 10 cups day old bread cubed, 3 cups low fat milk , 2 spoons olive oil, 1 or 2 turkey or chicken livers , 3 spoons unsalted butter, 8 cloves garlic minced, 4 shallots diced, 2 cups chopped onions, 1 kg mushrooms , ¼ chopped Italian parsley, 2 teaspoons chopped fresh thyme, some salt, pepper and 2 large eggs beaten . Take the bread and toss it with milk in a large bowl . In a pan heat 1 spoon of oil and then add the liver for about 2 minutes . After add the remaining oil and the butter and cook it a little more, than add the garlic and shallots and cook for 2 more minutes . Add the onions and let it another 5 minutes .

Add the mushrooms and let them softened and then add them to bowl along with the liver . Take the bread and squeeze it and add it to the mixture . Add the parsley, thyme, salt and pepper and stir it well . Add the beating eggs and put all the mixture into a baking dish which has been coated with a cooking spray and cook it for 45 minutes .
